Demon Dust sales will support scholarships
Cajun seasoning available at area retailers

NATCHITOCHES – Dr. James Thibodaux hopes a little Demon Dust will help a few deserving students seeking to earn a degree from Northwestern State University. Thibodaux has partnered with the NSU Foundation to allow a portion of sales from his popular Cajun seasoning mix go to the NSU Foundation to support student scholarships.

 Demon Dust retails for $7, of which $.50 will go to the NSU Foundation to support student scholarships. Demon Dust is available at Cane River Kitchenware, NSU Marketplace campus bookstore, Propane Etc., Nichols, the Natchitoches Farmer’s Market and at all NSU tailgates. 

A Natchitoches physician, Northwestern State University alum and renown cook, Thibodaux has tinkered with seasonings and condiments for several years, originally giving them away to family and friends. He began marketing his creations as Daddy Thib’s Original Louisiana Spice Blends, which include Shake ‘N Rub, Lemon Jalapeno and Touch of Fire spice blends, chick fry and fish fry. He has been a fixture at the Natchitoches Farmer’s Market where shoppers can also find Daddy Thib’s salsa, marinara, barbecue sauce and jellies. He will have a booth at the upcoming Natchitoches Christmas Festival on Dec. 1.

“It’s something fun to do and a great way to meet people,” he said.

Thibodaux and his wife Nina are NSU alumni and parents to eight children and are often found quantity cooking for school functions, his office staff and gatherings of family and friends. Their two oldest children, Joseph and David, are current NSU students.

Thibodaux graduated from NSU in 1993 with a degree in biology and a minor in chemistry. His wife Nina graduated in 1994 with a degree in music education and flute performance.
